Recipe: Homemade Ice Cream Sandwiches

Want a delicious way to cool off in the heat of the summer? This tried and true recipe for homemade ice cream sandwiches is easy, can be prepared in advance & is sure to be an instant hit with people of all ages. We’ve served this delicious dessert at kid’s birthday parties and adult gatherings, all to rave reviews.

First, pick your favorite cookie recipe. We love the Nestle recipe, with a few tweaks. Use organic ingredients when you can, add about ½ - ¾ cup extra flour for thicker, more substantial cookies. You can also try chocolate chocolate chip, snickerdoodles or oatmeal chocolate chip. Do not over-bake the cookies or they will be too crumbly!

 

When you take the cookies out of the oven, cool for just 5 minutes. Remove your favorite flavor(s) of ice cream – do not let the ice cream soften or it will melt into your cookie. Scrape the ice cream out in long strips to insure a nice mouthful of ice cream with each bite. No skimping on the ice cream – we’re watching!

 

Once you have placed the top cookie on the sandwich, try rolling it in one of a few different toppings, such as rainbow sprinkles, mini m&m’s (trademark?), or mini chocolate chips. We won’t blame you if you “test” the recipe with one of the fresh cookie sandwiches, but feel free to wrap them in plastic wrap & save them for a later date. They’ll keep fresh for 3-5 days!
